BHC Grad’s Thai Mung Bean & Button Shroom Vegan Curry Detox Recipe

Thai Style Mung Bean & Button Mushroom Curry
with Coconut Infused Brown Rice
For the rice:
- 3/4 cup of brown rice sprinkled with black pepper
- 1/2 can coconut milk
- 1 cup of water
Place all ingredients in an oven tray and cook on 180C/350F until the water is absorbed.
For the mung beans:
- 3/4 cup mung beans
- 1 red onion
- 1 Tbsp coconut oil
- 3 cloves garlic, chopped
- 1 carrot
- 1 Tbsp curry powder
- 1 can coconut milk
- 2 cups button mushrooms
- 1 stalk lemongrass
Cook the mung beans on a medium heat with about 1.5 -2 cups water.
Sauté 1 chopped red onion for 1-2 mins in 1 tbsp coconut oil.
Add 3 garlic cloves chopped, 1 chopped carrot and cook for another 2-3 mins.
Add 1 tbsp curry powder and stir in for one more minute.
Open a can of coconut milk, spoon up the cream and add in the pan. Cook for another 2-3 minutes until the milk reduces, then pour in the remaining coconut water from the can.
Add the button mushrooms, 1 whole stalk lemongrass (which has to be removed at the end of cooking as it has been used just for extra flavor) and cook until it gets a nice and creamy consistency. In the end, mix up it altogether with the mung bean.
Serve with the the rice, sprinkle with fresh basil and fresh red chili and enjoy!
